The Importance of Tea

In Ireland, you go to someone's house, and she asks you if you want a cup of tea. You say no, thank you, you're really just fine. She asks if you're sure. You say of course you're sure, really, you don't need a thing. Except they pronounce it ting. You don't need a ting. Well, she says then, I was going to get myself some anyway, so it would be no trouble. Ah, you say, well, if you were going to get yourself some, I wouldn't mind a spot of tea, at that, so long as it's no trouble and I can give you a hand in the kitchen. Then you go through the whole thing all over again until you both end up in the kitchen drinking tea and chatting.

In America, someone asks you if you want a cup of tea, you say no, and then you don't get any damned tea.

A Midsummer Night's Dream

 This refreshing tea is made with Earl Grey and  Pineapple weed, which is a very common plant throughout the British Isle and Ireland. 

If you haven't heard of it, don't worry.  The chances are you have seen it and not taken any notice.  It grows low to the ground and is green in colour.  The leaves are soft and feathery and the flowers do not have petals. But if you crush this flower underfoot or between your fingers, the most surprising scent of fresh pineapple is released.

This unassuming plant really packs a fruity punch, and when blended with delicate, floral Darjeeling Earl grey the bergamot and grassy florals are carried aloft on a body of mellow black tannins, creating an exciting tea that is almost different with every mouthful and matures from a clean, refreshing, thirst quenching gold to a deep, comforting ochre after five minutes in the pot.

Complex layers of flavours weaving an enticing story that starts in the high tea gardens of Darjeeling and the meadows of west Clare, and ends with your ‘Aaah’ moment of relaxation as you take your first sip.

Witch's Brew

I first blended this tea in the early summer, when the blackberry leaves were soft, supple and still downy on the underside. At this stage, their flavour is punchy, fresh, grassy and unbelievably fruity. My method of rolling, bruising and fermenting them before slowly drying them intensifies the flavour and brings this tea to another level.

Once prepared, the blackberry leaves are blended with Darjeeling and golden Papaya.

Darjeeling tea is specific to the region in India with the same name, and has specific characteristics which set it apart from other teas. Grown high up in tea gardens with the perfect conditions for creating a tea that is delicate, floral, amber in colour and mildly astringent, with notes of peach and citrus, it’s easy to see why this is referred to as “The Champagne of Teas”

Blending Darjeeling with wild harvested blackberry leaves and Papaya creates an infusion that is bursting with fruit flavours, alive with bergamot and citrus top notes carried on a mellow amber warmth.

This tea is both elegant and punchy with a clean, refreshing taste and satisfying warmth

Buying Loose Leaf Tea

The Naked Forager Teas are sold by weight, not volume.  Contents may settle a little and this is normal.   Teas have a long shelf life if stored properly.  I recommend storing your tea in it's resealable pouch, in a cool dry, dark place such as a kitchen cupboard.  If you're lucky enough to have a beautiful tea caddy or tea chest then of course this would be a great place to store your tea too.

Naked Forager teas are designed to enjoy without milk, and to please the drinker of black tea and herbal tea alike.  

Brew for 3-5 minutes in a tea pot, strain and enjoy.

Make your own Tea

Tea is so important.  You may be inspired to go out and start creating your own bespoke teas, and I fully encourage this wonderfully satisfying activity.

Did you know that a tea without any leaves from the tea plants is called a Tisane?  This is usually a herbal tea, or any infusion made by pouring hot water over herbs, flowers , spices or a mixture of all of these.

Try going to your garden, a park or wild space and seeing what you can use to create yours. As always, make 100% sure you know what you are picking.  Also, check you have permission, check it is safe to pick (think pollution, and pesticides!) and never pick more than you need.  Always leave enough of the plant to regenerate and never pick too much from one area.  


Some plants you can use for creating your own herbal blends are:

Nettle (just pick the top four leaves before the plant flowers)

Rosehip (remove or strain seeds!)

Blackberry leaves (Pick while they are young)

Raspberry leaves

Dehydrated Apple, or crab apple

Chamomile flowers

Valerian

Mugwort

Lime flower (linden blossom)


Rosehip and crab apple are soft and fruity together, nettle gives a fresh green astringency and blackberry leaves are both grassy and fruity.

Linden flower and Valerian are helpful for sleep and should be taken with caution if you want to stay awake!
